Einkorn Bread Machine Recipe

Have you been hearing about Einkorn lately? Maybe you been feeling like gluten is getting you down, but you don’t want to, for the life of you, get rid of bread… and this “einkorn” word has been being passed around lately on your favorite podcasts?
I want to introduce you to Einkorn wheat, also referred to as “Jesus wheat”. Apparently this wheat was around in the time of Jesus.
Einkorn wheat is the only wheat that has not been hybridized, and since it’s usually grown in small batches it most likely is not covered in gross toxic chemicals either.
It’s been said that people with gluten allergies can actually do pretty great with this (but make sure you run this by your doctor, please).
It’s nutty, and sturdy. But man, there is nothing better than a piece of warm homemade bread straight out of the oven with a good spread of butter and honey on it… am I right?
While I would like to be one of those women who lovingly knead the dough on my counter and have multiple loaves baking in the oven… I’m not.
I need this to be fast or it will never be done.
Enter my other friend… the bread maker.
Getting a bread maker
*please hear me when I say… don’t buy a brand new bread maker. You can often go to a local thrift store and find (near) brand new bread makers that were purchased by well-intended homestead dreamers that never made more than one loaf. I got both of mine for under $15. But if you can’t bring yourself to buy a used one, or you don’t have any sitting on the shelves at your local thrift store, this one is apparently the best.
Working with einkorn takes a bit of tweaking and experimenting, but I finally figured it out. Here is my tried and true einkorn recipe + technique for making a well-rising loaf in my bread machine.
(Recipe comes from livesimply.com) and bread machine technique was played with on my own.
Ingredients
- 1 cup water room temperature
- 2 tsp active dry yeast
- 1/4 cup honey
- 2 TB extra virgin olive oil
- 1 tsp salt
- 3 1/2 cups all-purpose einkorn flour (I buy mine from Jovial)
- Place 1 cup water and 2 tsp dry active yeast in bread maker pan. Let sit for 5 minutes. Should start to foam up.
- Add in honey, olive oil, salt and top with flour.
- Turn bread maker to the “whole wheat” cycle.
- Set a timer for 90 minutes.
- When timer goes off, cancel current cycle.
- Push “bake” cycle.
- Let it bake, take it out when it’s done.
- Enjoy that shit!
